Vegetarian Hakka Noodles | Hakka Vegetable Noodles Microwave Recipe | Step by Step Recipe

Veg Hakka Noodles is one of those Indo Chinese Recipes that is so popular all over the place. Hakka Noodles will always find itself in all buffets and liked by almost everybody. The first time I made this was during my college days and Amma always says I make it well. The one incident that always comes to mind will be the time I made this for Konda. I made without any vegetables and back home, she was saying that I don't know how to make it, as good as Ammamma. Amma was saying I always make it better than her. What I finally understood was that Konda loves the vegetables with the noodles and that really made me happy as she will get to eat the vegetables.

We end up making this noodles for evening snack as Daddy also likes it a lot. So I decided I will pack noodles for Konda's lunch and for Daddy's breakfast. Knowing that my entry for this month's MEC is due, I decided to make the noodles in Microwave. To be quite frank, making the hakka noodles on stove top is much more easy and quick. So make sure she doesn't miss her van, I removed half for making the noodles for Konda, quickly made it on the stove top, then made the rest in microwave for Daddy.

Konda was so happy that she got the noodles for lunch and wanted me to make it again. I know I should be having this as a regular item.

Step By Step Recipe











Microwave Vegetable Hakka Noodles

Ingredients Needed:

Hakka Noodles - 1 packet
Onions - 1 medium
Carrot, Beans, Cabbage, Capsicum - 1 cup
Soya Sauce - 1 tsp
Salt to taste
Pepper powder - 1 tsp
Oil - 2 -3 tsp

How to make the Noodles in Microwave

In a microwave safe bowl, take water twice the amount to fill up the noodles, microwave for 8 mins. By this time the noodles was cooked well. Drain this over a colander, run this twice in cold water, add oil and mix well. This prevents it from sticking together.

Then microwave the chopped vegetables for 10 mins. Once done, drain the water. In a microwave bowl, add 1 tsp oil, saute the onions for 2 mins. Then add the boiled vegetables for a min. Once done, add the boiled noodles, salt and pepper powder, mix well. Microwave again for 2 mins.

Serve with tomato ketchup.

Notes:

Use the water from boiled vegetables in sambar. Always add the salt in the final stage for the noodles to get cooked well.

Vegetable Manchurian Recipe | Step by Step Recipe | Indo Chinese Recipe

Vegetable Manchurian was a great combo with Egg Fried Rice, which we had prepare nearly couple of months before. We normally make Cauliflower Manchurian as a side dish for Fried Rice. So Amma wanted to make something different and hence came up this wonderful recipe. This dish ends up being a clean up dish as you can add all your veggies that you might have left overs and tastes great.

Things have been pretty steady and hectic the past couple of days. I just announced the Kid's Delight on Indian Street Food. I was hoping I could prepare some pending Street foods that I had planned so many months before. Chocolate Round up will be up soon. Meanwhile I had some more bloggers being interested in the Blogging Marathon that it makes me think that maybe I should plan to do this again.

When I got back thinking I should post something within this week, this draft was literally calling me!..:) Imagine sitting idle in the drafts for so long without any attention. The vegetable manchurians tasted great as such, I saved some for eating as a starter without adding to the sauce. The sauce was made the same way we do for the Cauliflower Manchurian.



Step by Step to make Vegetable Manchurian


In a non stick pan, saute the onions, ginger, garlic and chili paste.
Then add the tomato sauce
Measure out soya sauce
Add the soya sauce to the pan
Followed by the corn flour mix
Add more water as required.
Fried Vegetable Manchurians
Add these balls to the sauce.
Finally garnish with spring onion greens



Vegetable Manchurian Recipe

To make the manchurian

Cabbage, Beans, Carrot, Potato - 1 cup
All purpose flour / Maida - 2 tsp
Corn flour - 1 tbsp
Green chillies - 3 nos
Pepper powder - 1/2 tsp
Ginger - 2"
Garlic - 4 pods
Salt to taste
Oil for deep frying

To make the sauce

Soya sauce - 1 & 1/2 tbsp
Tomato Sauce - 1 & 1/2 tbsp
Corn flour - 1 tbsp
Salt to taste
Garlic - 4 pods
Spring onions - 1 bunch




Method to prepare:

For Manchurian

Clean and cut the vegetables. Grind the half, should not be ground into smooth paste, but half half.

Grind the chilis, ginger, garlic into a coarse paste. Take the rest of the ingredients required to make the manchurian in a bowl, add the chili paste, ground vegetables. Add salt and mix well. The batter should not be loose or runny, so add very little water. Make them into small balls.

Heat a pan of oil, Once it is hot, reduce to medium flame, deep fry these manchurian balls. Cook on both sides and drain to a kitchen towel.

For the sauce.

Heat a non stick pan with 1 tsp oil, Add the finely chopped onions from the spring onions, then add finely chopped garlic. Sauté till the onion bulbs turn colour. Keep the green of the spring onions for latter use.

Next add ginger garlic and chilli paste. Add soya sauce. Followed by tomato sauce

In a small bowl mix the corn flour with little water to form a lump less batter. Once paste is fried, add this to sauce. Adjust salt. Fry on high flame so that the sauce thickens. Just make sure it doesn't become too thick.

Add fried vegetable balls to the sauce. along the green onions stocks. simmer for 1 min.

If you don't want the manchurian to be soggy, add just before serving.




Serve this with Egg Fried Rice

Egg Fried Rice Recipe | How to make Egg Fried Rice | Step By Step Recipe | Weekend Cooking

This is an easy egg fried rice recipe, Indian Style. Making Egg Fried Rice is not so complicated nor tedious process.When Chicken Fried Rice seem too tough you can ruffle this in no time. As always I normally make the vegetarian Fried rice first and then add the Scrambled Egg or Fried Chicken to the rice.  

I made this Egg Fried Rice couple of weeks ago for Sunday Lunch along with Vegetable Manchurian. Since this was the main course, I had to remove the portion for vegetarian before adding the scrambled eggs to it.



It's been raining non stop during the weekend. We had gone to Tirumala for Darshan and it was so chill in the hills. We had a wonderful darshan, it was a great weekend all together. Schools have been closed for the past 3 days before the weekend because of rain and we are at our wit's end to know how to keep the kids occupied at home.

Step by Step of making Egg Fried Rice.

Cook the rice and spread it out to cool the rice. This way the rice separates into grains.

Make the vegetable mix ready. I followed the same way as Chicken Fried Rice Recipe

For the scrambled Egg, heat a pan with oil, saute onions till light brown.

Beat the eggs well with salt, add to the fried onions.

Add spring onion greens, green chilies

Scramble it quickly, sprinkle pepper over it.






Then add the cooked Fried Rice to the pan and mix well.

Chinese Fried Rice with Egg


Egg Fried Rice Ingredients

For the Rice

Basmati Rice - 3 cups
Spring Onions - 1 bunch
Capsicum - 1 medium
Beans, Carrot and Cabbage - 2 cups
Salt to taste
Ajinomoto - 1/4 tsp
Soya Sauce - 2 tbsp
Cumin Seeds - 1 tsp
Oil - 2 tbsp
Pepper powder - 1 tbsp

For Scrambled Eggs

Eggs  - 3 nos
Onions - 1 medium
Salt to taste
Pepper powder - 1/4 tsp
Green Chilies - 1 long
Spring Onion greens - handful
Oil - 1 tsp

How to make Egg Fried Rice


To make the Rice:

Check the steps to make the Rice in the Chicken Fried Rice.

To make the Scrambled Eggs

Chop onions finely. Heat a pan with oil, saute onions till they turn colour. Meanwhile take the eggs in a bowl, whisk well with salt and pepper. Retain some pepper to sprinkle over the cooked eggs finally.


When the onions are done, add the egg batter, spring onion greens, green chilies, scramble it quickly over high flame. When the eggs are cooked, sprinkle the pepper over it.

Then simmer, add the required fried rice to the pan and mix again.




I served this with Vegetable Manchurian which will follow.

Chicken Fried Rice Indian Style | How to make Chicken Fried Rice Step By Step Recipe

The mention of Chinese Fried Rice takes me down the memory lane. It was the early 90's that the Indian Culinary world was introduced to those tempting fusion dishes from the Chinese Cuisine. Take away packs of Chinese Fried Rice with Chop Sticks was a fad. That was also when most felt that eating out was fashion. Weekend night was dedicated to eating out Chinese.

I think the invasion was through Egg Fried Rice, Chicken Fried Rice, before the Vegetable Fried Rice came into picture. There was really not much of a difference with the basic recipe being the same and you can just spice up the main ingredient and add them. With years passing, this become such an integral part of our restaurant menu that Chinese got dropped and Fried Rice became a standard item. As Cauliflower Manchurian is. Flip through any Restaurant and you will find Fried Rice, Chicken Fried Rice, Egg Fried Rice, Cauliflower Manchurian without fail.

At our home these were regulars at least once a month. Needless to say Amma makes all these so very well. Somehow after my marriage these dishes took a back seat. Nevertheless they appear on table once in a while. Especially when we are entertaining guests. These dishes are also special for me, as these are few of the dishes that I end up making exclusively when cooking together with Amma. And this recipe is very much a chinese fried rice restaurant style with the smoky effect.

Today's recipe was cooked many months ago, when parents had guests for dinner. I was called for making this Chicken Fried Rice and naturally I won't miss the opportunity of clicking away the pictures. But can you believe, I actually forget to take a final picture. So you got to do with seeing how it looked at the final stage on the Kadai. When I realized this, Amma said we can naturally cook it again and take a picture. I said that can wait but the post can't. Will surely update a final picture when I get around making it again.
 

Get all the vegetables ready by chopping them into fine pieces.

Heat a wok or a kadai with oil. Saute onions, cumin seeds. Once done, add the capsicum, saute till half done.
 Tilt the kadai to a side so that the oil along with vegetables reach the flame. This will make sure it gets the smoky effects.

See how the vegetables catch flame and it lets out a good smoky smell. But ensure you are very careful with all vegetables not catching fire.

Then add rest of the vegetables and continue with the smoky effect if required
.
Next goes the cabbage, beans.
 Add the soya sauce to the vegetables, salt and ajinomoto.

 Then add the cooked rice to the kadai. Mix well

Finally add the pepper and spring onion greens.

Meanwhile pressure cook the chicken as mentioned below and remove the bones from the chicken.




Heat a pan with oil, saute the green chili sauce, then followed by the chicken pieces and pepper. 

Finally add the chicken pieces to the rice or remove the portion you want to add to the chicken and mix together.

Chinese Fried Rice with Chicken
Serves 6

Ingredients Needed:

For the Rice

Basmati Rice - 3 cups
Spring Onions - 1 bunch
Capsicum - 1 medium
Beans, Carrot and Cabbage - 2 cups
Salt to taste
Ajinomoto - 1/4 tsp
Soya Sauce - 2 tbsp
Cumin Seeds - 1 tsp
Oil - 2 tbsp
Pepper powder - 1 tbsp

For Chicken

Boneless Chicken - 250 gms
Ginger Garlic paste - 1/4 tsp
Salt to taste
Pepper powder - 1/4 tsp
Garam Masala / Green Chili Sauce / Red Chili powder - 1/2 tsp
Oil - 1 tsp

Method to prepare:

To make the Rice:

Clean and soak rice for 15 mins. Cook the rice in a non stick pan with 4 & 1/2 cups of water. Since the rice has to be non sticky and separate, you can even reduce quarter cup of water. You can either pressure cook or cook directly on stove. Once its cooked, remove and spread it on a plate so that you have each grain separate.

Chop all vegetables finely. Onion bulbs can be chopped as circles. The stock is saved to be used for garnish at the final stage. Rest of the vegetables can be chopped finely.

Heat a wok or Kadai. Wok works out best as you an flip the vegetables to come directly in touch with flame, which brings out the characteristic smoky effect. Add 2 tbsp of Oil, to this add cumin seeds. When it splutters, add chopped spring onions. Fry well, then add all the chopped vegetables. Sauté well with the flame high. To get the smoky restaurant effect, tilt the kadai to a side and let the vegetables catch the flames. The moment the vegetable in oil gets burnt you can smell the charred or smoky smell. Tilt it back and keep sautéing till the vegetables are crisp and cooked. This dish requires the vegetables to be crisp and not over cooked.

Then add Ajinomoto, salt and Soya sauce. Sauté well. Slowly add the cooked rice and mix well. Add the pepper powder and adjust the salt. Sprinkle the spring onion stocks over the rice.

Every step in this needs to be cooked on high flame.

To make the Chicken

Pressure cook the chicken, along with salt to taste, turmeric powder and Ginger Garlic paste.

Once it is done, remove the bones and keep the boneless chicken pieces aside. We normally don't add water for pressure cooking as chicken will let out water. If you are not making any gravy, you can cook the chicken to make it dry.

Heat a pan with oil, add chili paste/ red chili powder, whichever you are going to use. Sauté in the chicken pieces, sprinkle pepper powder and garam masala if you are going to use that. Once it is dry, add the chicken pieces to the rice.

If you want to make sure vegetarian eat,  make sure you remove a portion and add the rest to the chicken pan.
